Making Pumpkin Spiced Baked Oats on ABC Portland!

Today on Afternoon Live, Tiktok influencer and chef Kathleen Ashmore joined Kara on the show to share a recipe that is perfect for the start of fall-Pumpkin Spice Baked Oats! 

Pumpkin Spice Baked Oats

Serves 4

Ingredients:

Baked Oats:

1 cup old fashioned oats

1 tsp. Baking powder

1 tsp. Pumpkin Pie Spice

1/2 tsp. Kosher salt

2 large eggs

2 Tbsp. maple syrup

1/3 ripe pumpkin puree

1 tsp. Vanilla extract

1/2 cup unsweetened almond milk

Maple Yogurt Topping:

Coconut yogurt or thin yogurt of choice, for topping after baked (optional)

1 tsp maple syrup

Preheat the oven to 350 degrees F.

Combine oats, baking powder, salt, pumpkin pie spice, eggs, pumpkin puree, vanilla and

almond milk in a high speed blender and blend for 20 seconds.

Transfer the batter to 4 oven safe ramekins sprayed with nonstick spray.

Bake for 25 minutes, or until golden on top and cooked through.

While baking, whisk together the yogurt and 1 tsp maple syrup for topping.

Allow to cool briefly on a cooling rack before drizzling with the maple yogurt.

Serve.
