The Best Mayo-Free Tuna Salad
This is my absolute favorite tuna salad, with lots of briny vegetables and tons of flavor you will never miss the mayo.

Ingredients

cans
good quality Yellowfin or albacore tuna, drained
1/2
cup
white or red onion, diced
I soak mine for 10 minutes in water to mellow the flavor

stalks
celery, diced
6
peperoncini peppers, sliced thin
2
tbsp
capers, rinsed and minced
1/2
cup
fresh parsley, chopped
2
tbsp
dijon mustard
1/3
cup
peperoncini brine
2
tbsp
red wine vinegar
1/2
cup
extra virgin olive oil
Kosher salt, to taste

Fresh cracked pepper, to taste
Instructions
In a large bowl, combine drained tuna, onion, celery, peppers, capers, and parsley. Mix briefly.
Add in the dressing ingredients: mustard, brine, vinegar, olive oil and a pinch of salt and pepper.
Mix to combine and taste. Add more salt if needed.
Serve on a salad, sandwich, or scooped up with tortilla chips or crackers.
