Ingredients
3cupscooked turkey breastdiced
½small onionminced
2stalks of celerydiced
¼cupdried cranberries
¼cupchopped parsley
⅓cuptoastedchopped walnuts
2teaspoonswhole grain mustard
¼cupplain yogurt
¼cupmayonnaise
Kosher salt
Fresh cracked black pepper
Instructions
In a large bowl, combine the mustard, yogurt, mayonnaise, ½ teaspoon of salt and a few cracks of pepper. Whisk to combine.
Add in the diced turkey breast, onion, celery, cranberries, parsley, and walnuts.
With a rubber spatula or wooden spoon, mix gently to fully coat the ingredients with the dressing. Taste and add more salt and/or pepper if desired. Serve on a sandwich, salad, or with crackers and enjoy.
