Ingredients
Extra virgin olive oil
2garlic clovesminced
6-7cupsswiss chard leavessliced thin
1 ½cupsfull or partial fat Greek yogurt
½cupmayonnaise
1teaspoononion powder
¾teaspoongarlic powder
¾teaspoonsea salt
½teaspoonfreshly cracked black pepper
1teaspoonDijon mustard
1teaspoonWorcestershire sauce
¼cupminced chivesplus more for garnish
Pita chipscarrot and celery sticks, for serving
Instructions
Set a large, deep sided saute pan over medium heat. Add 2 tablespoons of olive oil.
Saute the garlic for 30 seconds, stirring, until lightly golden.
Add the swiss chard with ¼ teaspoon of salt (you’ll use the rest of the salt later) and cook, stirring, for 3-5 minutes until soft. The swiss chard will cook down quite a bit, so don’t be afraid to overfill the pan. Once the chard is soft, set aside to cool.
In a large bowl, mix together the yogurt, mayonnaise, onion powder, garlic powder, ½ teaspoon salt, pepper, mustard, and worcestershire.
When cooled, mix in the swiss chard mixture and chives.
To serve, spread the dip in a shallow bowl or platter and sprinkle with more chives a drizzle of extra virgin olive oil. .
Serve with pita chips, crackers, and/or sliced fresh vegetables.
