I love tomatoes in all ways but sauteed in a salad like this might be my new favorite!

Ingredients 

Arugula + Blistered Tomato Salad:

  • 1 Tablespoon olive oil
  • 2 cups cherry Tomatoes
  • Kosher salt
  • Fresh cracked black pepper
  • 6-8 cups arugula, washed and spun dry
  • 1 15 oz. can white beans, drained and rinsed
  • 1 large shallot, sliced thin
  • Truffle salt, optional, for finishing

Creamy Balsamic Dressing:

  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1/4 cup Balsamic vinegar
  • ¼ cup Olive oil
  • 1/4 cup mayonnaise
  • 3 sprigs of fresh thyme, leaves removed
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper

Instructions 

  • Heat olive oil in a medium pan over medium-high heat. Add the tomatoes and let them sit in the pan for 1-2 minutes to start blistering.
