Let me tell you something about deviled eggs… They are absolutely delicious and I will die on that hill. Every single BBQ, every single summer, I make a tray and every single time they disappear in approximately four minutes flat. They are oh so worth it, but they are also totally timeconsuming.

So, let’s be real for a second…deviled eggs are kind of a production. The peeling, the slicing, the piping, the inevitable egg yolk that goes rogue and ends up everywhere. By the time you are done you have used every bowl in your kitchen and your patience is completely gone.

Eventually, it hit me. Why not take all of those incredible deviled egg flavors and turn them into a salad instead? Same tangy mustard, same creamy mayo, same sweet paprika — but without any of the fuss. No piping bag required. No perfectly centered yolk to obsess over. Just smash, mix, and serve.

Pile it on a sandwich, scoop it up with crackers, serve it over greens, or eat it straight out of the bowl while standing at the counter. No judgment here whatsoever. This is a safe space.

Ingredients

Hard boiled eggs– The star of the show and the whole reason we are here. Ten of them, smashed into the most glorious creamy yet textured base.

Celery– Adds that satisfying little crunch that keeps things interesting.

Red onion– Finely minced so you get that sharp, punchy flavor in every bite without an overwhelming onion situation. Trust the small dice on this one.

Dijon mustard – The non negotiable. This is what gives deviled egg salad its signature tangy depth and makes it taste like the real thing.

Mayonnaise– The creamy backbone that holds everything together beautifully. Use a good quality mayo here, it makes a difference!

White wine vinegar– Just a splash adds the most perfect bright acidic note that cuts through the richness and makes every flavor pop.

Sweet paprika– The finishing touch that gives this salad that classic deviled egg flavor and the most beautiful warm color. It is doing more work than people give it credit for.

How to Make my Deviled Egg Salad

Cut each egg in half and add to a large bowl.

With a fork (or even better a pastry blender or a ground meat mallet), smash the eggs until they are smooth but still have a bit of texture. You want there to be pieces of egg white visible, but for it to be less chunky than a traditional egg salad.


To the large bowl, mix in the celery, onion, mustard, mayonnaise, vinegar, paprika, and a big pinch of salt and pepper.


Taste for seasoning and add salt if needed.


Serve in a sandwich, on a salad, or scoop it up with crackers or tortilla chips.
The egg salad will keep, refrigerated and covered for up to 5 days.

Up to 5 days covered in the fridge. Although let’s be honest, it will never last that long. It won’t even last 24 hours in my house.

Can I use a different mustard?

Dijon is really the move here, it gives you that classic deviled egg flavor that makes this whole thing work. Yellow mustard will do in a pinch but it is a different vibe. Whole grain mustard is actually a lovely swap if you want a little extra texture!

How do I hard boil eggs perfectly every time?

Place eggs in a single layer in a pot, cover with cold water by an inch, bring to a boil, then turn off the heat and let them sit covered for exactly 11 minutes. Transfer immediately to an ice bath to stop the cooking. Perfect hard boiled eggs every single time. You are welcome.

What is the best way to serve this?

Honestly every way is the best way. Piled high on toasted sourdough for the most incredible sandwich. Scooped up with crackers or tortilla chips as an appetizer. Served over a bed of greens for a light lunch. Or eaten straight out of the bowl with a spoon at midnight.

  1. I make deviled eggs very simply…but I steam eggs rather than boil them. Perfect every time! I don’t care for egg salad…sue me…but love deviled eggs. Very simple…Mayo, Dijon mustard. Mash up yolks, spoon into halved whites, sprinkle with paprika and put a small piece of red pepper on each. They disappear immediately! I am asked for my recipe…I always say there is no recipe…nothing fancy, very plain but delish!
