🗒️ Ingredients

Sweet Potatoes – Naturally sweet and hearty, they create the perfect base and roast up tender with beautifully caramelized edges.

Ground Turkey – Lean and protein-packed, it adds a savory, satisfying layer that pairs perfectly with the sweetness of the potatoes.

Avocado Oil – A neutral, high-heat oil that helps everything roast evenly while adding a subtle richness.

Salt and Pepper – Simple seasoning that enhances and balances all the flavors.

Black Beans – Creamy and hearty, they add extra protein and texture to make this dish more filling.

Monterey Jack Cheese – Mild, melty, and creamy, it ties everything together with the perfect cheesy finish.

Cilantro – Fresh and bright, it adds a pop of color and flavor right at the end.

Sour Cream – Cool and creamy, it balances the warmth and spice of the dish.

Jalapeños – Thinly sliced for a little kick and just the right amount of heat.

👩‍🍳 How to Make My Loaded Sweet Potato Nachos

  1. Prep the sweet potatoes:
    • Wash the sweet potatoes and dry thoroughly. Microwave for 30-60 seconds before proceeding to slice (in order to soften slightly).
    • Slice sweet potatoes using the Pampered Chef Rapid-Prep Mandoline on the Slice, #6 to get ¼-inch rounds or thin chips.
    • Because of the density of the sweet potatoes, make sure you use ample pressure. 
  2. Cook the sweet potatoes:
    • Preheat the Pampered Chef Deluxe Air Fryer & Oven or oven to Heat & Crisp (375 F) for 17 minutes.
    • Arrange sweet potato slices in a single layer on the sheet pan. Coat sweet potatoes with avocado oil (or high heat oil) and salt before baking. When prompted to “Add Food” place the sheet pan into the oven and press Start.
    • Rotate the pan half way through for even cooking.
  3. Cook the turkey:
    • Heat some oil in the Pampered Chef Stainless 10″ Sauté Pan over medium heat for 2-3 minutes.
    • Add ground turkey and season with salt and pepper or some Taco Seasoning.
    • Let the meat sear for a few minutes, then break it up with the Pampered Chef Mix ‘N Chop® and cook until no longer pink. (about 6–8 minutes).
  4. Prepare toppings:
    • Drain and rinse black beans using the Pampered Chef Can Strainer.
    • Grate cheese with the course side Pampered Chef Adjustable Double Grater.
    • Chop cilantro with the Pampered Chef Foundations Chef’s Knife.  

Optional: make a quick guacamole in the Pampered Chef Electric Twist & Chop.

Tips & Tricks

  • For extra crispiness, toss sweet potato slices with a little avocado oil before cooking. This works wonders!

👝 How to Store Leftovers

Start by letting the nachos cool to room temperature. I store the leftovers in the Pampered Chef Store & Serve containers. These stay good for about 3-5 days.

🧠 Common Questions

Can I make this recipe vegetarian?

Yes! Simply swap the ground turkey for extra black beans, pinto beans, or a plant-based ground alternative. You could also add sautéed peppers and onions for extra flavor and texture.

How do I keep the sweet potatoes from getting soggy?

Make sure they’re sliced evenly (about ¼-inch thick), arranged in a single layer, and lightly coated in oil. Avoid overcrowding the pan- this helps them crisp instead of steam.

Can I prep any of this ahead of time?

Yes! You can cook the turkey and slice the sweet potatoes in advance. Store separately in the refrigerator and assemble just before baking and broiling for the freshest texture.

How spicy is this recipe?

The heat level is mild to moderate depending on how many jalapeños you use. For less spice, remove the seeds or skip them entirely. For more heat, add extra jalapeños or use Taco Seasoning on the turkey.

Loaded Sweet Potato Nachos

Ingredients 

  • 2 Small Sweet Potatoes, Sliced thin (typically 2 inches in diameter, if you have wider sweet potatoes cut in half before using Rapid Prep Mandoline)
  • 1 lb Ground Turkey
  • Avocado Oil, for roasting the potatoes and cooking the meat
  • Salt & Pepper to taste, or Chipotle Rub for added flavor
  • 1 Can (15 oz) Black Beans, drained and rinsed
  • 6 oz Monterey Jack Cheese, grated (1-1 ½ cups),
  • 2-3 tbsp Cilantro, chopped,
  • 1/2 cup Sour Cream, (sub Greek yogurt for more protein!)
  • 1 or 2 Sliced Jalepeno,
  • Optional Toppings:  avocado, guacamole, diced tomatoes, salsa

Assemble the Nachos:

  • When the sweet potatoes are done, preheat the top oven to broil for 3 minutes. Top the sweet potatoes with the  cooked turkey, black beans, and cheese.
  • Repeat layers as desired.

Melt the cheese:

  • When prompted to “Add Food,” place the pan into the oven  and press Start.

Add Fresh Toppings:

  • Remove and top with cilantro, jalapeños, sour cream, and any other optional toppings.
  • Serve and enjoy!
