As much as I hate to admit it, this 3 Ingredient Viral Cobbler is sort of genius. Like, embarrassingly genius. It is just SO. Simple. And. Delicious. It comes together in about 3 minutes flat, which means you have absolutely no excuse not to make it.
You’ve heard me say it before…I always need a little sofa snack at night when I’m watching TV. It’s just my thing. (Except, of course, when the Summer House reunion is on, because honestly my stomach will be in complete knots).
Coco and I made this together for Memorial Day weekend & we completely devoured it…warm bubbling berries, golden cookie tops, and a big scoop of vanilla ice cream melting right into the whole thing. We used the Sweet Loren’s GF chocolate chunk & it was great, I have also seen this done with their sugar cookie. It was one of those moments where you take a bite and just look at each other like… why did I not think of this sooner?
Pair it with a dollop of whipped cream or a scoop of vanilla ice cream and you’ve got yourself the world’s easiest berry cobbler. The kind of dessert that makes people think you really tried (wink, wink).

Ingredients
Frozen berries– The star of the show! Using frozen berries means you can make this any time of year without waiting for fresh fruit to be in season. I use strawberries and raspberries. No thawing needed, they go straight from the bag into the dish.
Lemon juice– My little secret weapon. Just a squeeze brightens up the berries and adds a fresh, zippy flavor that takes this from good to really good.
Refrigerated cookie dough– This is the genius part. The pre-portioned rounds of cookie dough bake right on top of the berries into the most perfectly golden, slightly crispy, slightly chewy topping. I love Sweet Loren’s, but you can use whatever you can find!

How to Make the Viral Berry Cobbler
Preheat oven: Preheat oven to 350°F.2
Prep the berries: Add 2 bags frozen berries (I used strawberry and raspberry) to an 8×8 or 9×9 baking dish, no need to thaw! Squeeze lemon, juiced (just half!) on top and toss to combine.
Place the pre-portioned refrigerated cookie dough, (I used Sweet Loren’s ) on top of the berries in an even layer.
Bake for 25–27 minutes until the berries are bubbling and hot, and the cookies are golden brown on top.
Remove from the oven and let rest for at least 15 minutes before serving.
Top with vanilla ice cream or whipped cream and enjoy!
