😍 To Kick Off Father’s Day Lunch: The Best Chunky Guacamole
This recipe was inspired by a vacation I took with some girlfriends to Tulum, Mexico. I had heard wonderful things about Tulum, not the least of which was the incredible food, and I came home craving one thing in particular: the chunky, salty, herb-flecked guacamole.
This guacamole isn’t smooth like you find at most restaurants and markets here in America. It’s textured and filled with big pieces of avocado, dressed with fresh lime juice and bursting with flavor. It’s one of the recipes my friends and family look forward to enjoying most when invited to my house, and the perfect way to kick off a Father’s Day celebration!

Oh my goodness, this recipe (with one cheat using canned petite diced tomatoes) was perfect. I could taste all the ingredients separately in each bite which made it so special. Perfect!

Brace yourself because this may be a controversial opinion, but I’m not a big fan of the pulled pork tossed in syrupy sweet barbecue sauce. I am a big fan, however, of it topped with a bright, acidic sauce like this one.
This Slow Cooker Braised Pork with Parsley-Vinegar Sauce is quite possibly my favorite way to eat a big, affordable cut of meat like a pork butt or shoulder. Not only is it incredibly simple to make, it is a total crowd-pleaser and leftovers are great on sandwiches or in rice bowls all week long.

🍽️ The Grand Finale For Father’s Day Lunch: Coconut Lime Sheet Cake
Do you like key lime pie? Do you like coconut cake? If you answer yes to both of those questions, then this is the cake for you. This cake has a dense, moist crumb with the perfect combination of coconut and lime, and is topped with a simple, bright glaze and toasted coconut. It’s ideal for a crowd, as it will feed a lot of people. Don’t even think about halving this recipe: a lot of people will want a piece of this cake!
