The Best One-Bowl Gluten Free Fudge Brownies

The title of these brownies is not hyperbolic. Though I am fond of hyperbole, I assure you, I am not exaggerating when I tell you these are one of the best brownies I have ever had.

Add to it that they are gluten free, grain free, and refined sugar free and that statement is even more meaningful. As always, feel free to swap in regular all purpose flour, whole wheat flour, or a gluten free blended flour (I like Cup 4 Cup), and granulated or cane sugar for the coconut sugar if that’s what you have. Nothing should stand in the way of you making these.

There are so many great brownie recipes out there, two I’m particularly fond of are Alice Medrich’s Cocoa Brownies and Martha Stewart’s Chewy Brownies for example. So why do you need yet another brownie recipe?

Because they are that good. They are also very easy to make – no double boiler, no sifting, no excessive whisking. I’ve streamlined the process to be really straightforward and quick, making it easy to whip these up at 2pm on a Tuesday or anytime that suits you. Can I use a different type of oil instead of sunflower or canola oil?

Yes, you can substitute the neutral oil with other options such as avocado oil or melted coconut oil, though the flavor may vary slightly.

Can I replace coconut sugar with another sweetener?

You can substitute coconut sugar with regular granulated sugar, maple sugar, or another natural sweetener, but the texture and flavor might be slightly different. Coconut sugar gives these brownies a rich, caramel-like flavor.

Can I use a different type of flour instead of almond and oat flour?

Almond flour and oat flour provide a great texture and flavor for these brownies, but you can experiment with a gluten-free all-purpose flour blend. If you do, make sure it includes xanthan gum to help with texture.

I don’t have an 8×8 pan. Can I use a different size?

Yes, you can use a different size pan. If you use a larger pan (e.g., 9×9 inches), the brownies will be thinner and bake faster, so be sure to check them earlier. For a smaller pan, the brownies will be thicker, and you may need to bake them a little longer.

How can I make sure my brownies stay fudgy?

To maintain that fudgy texture, make sure not to overbake the brownies. A tester should come out with a few crumbs, not completely clean. Tapping the pan on the counter after baking helps deflate them slightly, ensuring they remain fudgy.

Can I make these brownies vegan?

Yes! To make these brownies vegan, substitute the eggs with a flax egg (1 tablespoon flaxseed meal + 2.5 tablespoons water, let sit for 5 minutes), or use another egg replacer like aquafaba (3 tablespoons per egg).

How do I store these brownies?

Store your brownies in an airtight container at room temperature for up to 3 days, or refrigerate them for up to a week. For longer storage, you can freeze them for up to 2-3 months. Freezing makes cutting easier if you prefer them cold.

The BEST One-Bowl Gluten Free Fudge Brownies

Yield: 9-16 depending on how large you slice them

Ingredients:

1 cup dark chocolate chips

¼ cup unsweetened cocoa powder

½ cup neutral oil, like sunflower or canola

3/4 cup coconut sugar

2 large eggs

1 teaspoon vanilla extract

3/4 cup blanched almond flour

1/2 cup oat flour

1 teaspoon baking powder

1/4 tsp baking soda

1/4 teaspoon kosher salt

Preheat oven to 350 degrees F.

Grease a 8×8 inch square pan and line with parchment paper so you have overhang on two sides.  This makes removing the brownies easy as you have handles to grab onto.

In a large bowl, whisk together the oil, eggs, vanilla, and coconut sugar.  Whisk in cocoa powder.

Add in flours, baking powder, baking soda, and salt and whisk to combine.

Fold in chocolate chips.

Pour mixture into prepared pan.

Bake for 25-30 minutes, or until tester comes out with a few crumbs sticking to it.  You don’t want to overbake in order to retain that fudgy texture.

Once out of the oven, tap the bottom of the pan on the counter a couple of times to help them deflate slightly.  This makes them very fudgy.

Let cool on rack for 30 minutes, then lift the brownies out of the pan.  Continue to cool on rack, or as I do, in the freezer to make cutting a breeze.
