This watermelon salad with cucumber, feta and honey-lime dressing is quick, delicious, and deserves to be on every entertainer’s table this summer. It’s refreshing, vibrant, and about as close to the taste of sunshine as we can get (in my opinion). The crispy cold watermelon and cucumber mixed with salty feta, tart lime juice and sweet honey make it the kind of dish that makes people pause mid-bite. But the real magic? A hint of grated ginger that adds just enough warmth to make you go, “Wait – what is that?” It’s subtle, unexpected, and sets this apart from every other watermelon salad on the table.

This is the dish you bring to a summer potluck and leave without leftovers. It’s gluten-free, vegetarian, and comes together in just ten minutes. But fair warning – watermelon is full of water (go figure), so once this salad is tossed, the juices start to pool. That means this one’s best served right away, ideally as the very last thing you prep before the meal begins. It’s worth the timing dance.

😍 Why You’ll Love This Watermelon Salad

This salad checks all the summer boxes. It’s light, crisp, and bursting with flavor, and somehow manages to feel both fancy and effortless at the same time. The combination of sweet melon, crunchy cucumber, and creamy, salty feta is already a win – but it’s the dressing that takes things to the next level. Lime, honey, and ginger come together in a way that’s bright, zingy, and just a little unexpected. It’s that “can’t put your finger on it” flavor that makes people ask for the recipe.

🗒️ Ingredients

Fresh Ginger – Brings a subtle warmth that balances the sweetness of the fruit and the tart lime.

Honey – Adds natural sweetness to round out the sharp citrus and salty cheese.

Lime Juice – Bright and tart, it lifts all the other flavors.

Extra Virgin Olive Oil – Adds richness and depth to the dressing.

Kosher Salt + Cracked Pepper – Essential seasoning to enhance every bite.

Watermelon – Cold, crisp, and hydrating, it’s the juicy base of this dish.

English Cucumber – Crunchy and mild, it balances the sweetness of the watermelon.

Fresh Mint + Basil – The herb combo that gives this salad garden-fresh flavor.

Feta Cheese – Salty, tangy, and creamy, it brings everything together.

👩‍🍳 How to Make My Watermelon Salad with Cucumber, Feta Cheese and Honey-Lime Dressing

🍯 Start by making the dressing: whisk together the grated ginger, honey, juice of one lime, olive oil, salt and pepper. Taste it – if you want it more tart, add the second lime. Set it aside.

🥣 Next, in a large serving bowl, combine the watermelon cubes, cucumber, chopped herbs, and about ¼ cup of the feta.

🥄 Pour the dressing over the top and gently toss everything together. You want it coated, not crushed.

💦 Sprinkle the remaining feta over the top and serve right away.

🥳 Enjoy!

🎩 Tips and Tricks

  • Make this the very last thing before you sit down – watermelon releases a lot of liquid as it sits.
  • Use cold watermelon straight from the fridge for extra crunch.
  • Taste the dressing and adjust to your liking. You’re the boss here!

🌟 Variations

Want to make it your own? Here are a few ideas:

  • Add thinly sliced red onion or pickled shallots for tang.
  • Swap basil for dill or cilantro if that’s what you have on hand.
  • Add a sprinkle of chili flakes for heat.

🤲 Substitutions

  • You can use Persian cucumbers, or even regular cucumbers, just peel the skin off regular cucumbers as it can be tough.
  • Leave out the ginger if you don’t have it, or don’t care for it.
  • If you’re dairy-free, omit the feta.
  • If you’re vegan, use vegan feta or omit and use maple syrup instead of honey.

📓 Best served with

  • Grilled chicken or fish
  • Corn on the cob
  • Crusty bread with olive oil
  • Sparkling water with lime (or a crispy Diet Coke, if you’re feeling fancy)

👝 How to Store Leftover Watermelon Salad

This salad is best eaten fresh, but if you do have leftovers, store them in an airtight container in the fridge for up to 1 day. Just know the texture will soften, and you might get a little watermelon “broth” at the bottom. It’s still tasty, just less crisp.

🧠 Common Questions

Can I make this ahead of time?

Sort of. You can prep the dressing and cut the watermelon and cucumber in advance, but don’t toss it all together until you’re ready to serve.

What kind of cucumber works best?

English cucumbers or Persian cucumbers are ideal because they’re seedless and have tender skins. If using regular cucumbers, peel them.

Is there a way to make it spicy?

Yes! Add a pinch of red pepper flakes or a finely chopped jalapeño to the dressing.

Can I use bottled lime juice?

Fresh is best here. Bottled juice can taste flat. If it’s your only option, use it, but maybe add a bit more zest or fresh herbs to brighten things up.

How do I pick a good watermelon?

Look for one that feels heavy for its size and has a yellowish field spot (not white!). A hollow sound when tapped is also a good sign.
